I have family roots in the deep south. Parents and grandparents born and raised in Louisiana. I have an ancestor named Cannonball, for real!
Certain southern traditions were passed down. My grandmother and my mother both made Southern Pecan Pralines every Christmas.
Here’s my “Southern Veggie Plate” dinner. Just add corn bread!
- Black Eyed Peas (they don’t require pork)
- Sauteed Chopped Collard Greens (in olive oil w/ just onion powder & salt)
- Sauteed Fresh Okra w/ fresh tomatoes and onions – olive oil, salt, spiced with cayenne pepper – this method of cooking them keeps the okra more firm and less “slimy”
Great addition: Sweet Potatoes!
