Radha’s Vegan Veggie Burrito

I make a lot of Mexican food! This time it was vegan.

I made this vegan Veggie Burrito with:

  • refried beans
  • mushrooms, zucchini, onions and peppers with cumin seeds and chili powder sauteed with coconut oil
  • topped with chopped cilantro  and fresh tomatoes
  • topped with avocado slices sprinkled with fresh-squeezed lime juice, garlic powder and salt

I love it HOT, so I sprinkle minced habanero peppers on sprinkled top.
